Explanatory Notes
Carbohydrates include simple sugars (monosaccharides) such as glucose and fructose, and compounds formed by their condensation, such as disaccharides, oligosaccharides, and polysaccharides. They can also occur in reduced (alditols) or oxidized (acids, aldehydes, ketones) forms, or as modified derivatives in which one or more hydroxy groups are replaced or substituted. Carbohydrates serve as energy sources, structural materials, and signaling molecules in living organisms.
